Do you know some recipes to use Artichokes, Leeks, red chicory and or Broccoli in my food? easy to prepare?

I've heard all those are so healty, but i am not used to them, or others like eggplant, Brussels sprout, etc.





I always use lettuce, spinach, carrots, tomatoes, avocado, you know the most usual vegetables.Do you know some recipes to use Artichokes, Leeks, red chicory and or Broccoli in my food? easy to prepare?
Try these





ASPARAGUS, LEEK %26amp; POTATO SOUP





1/2 stick unsalted butter


3 lg. leeks, use all of white part %26amp; 1 inch of green, chopped


1/2 tsp. dried thyme, crumbled


1 bay leaf


6 c. chicken stock


1 1/2 lbs. sm. red potatoes, quartered


1 lb. asparagus, steamed %26amp; cut into 1 inch pieces





Melt butter over low heat. Add leeks, thyme and bay leaf. Cover and cook until leeks are soft. Mix in stock and potatoes and bring to boil. Reduce heat, cover and simmer until potatoes are tender. Remove bay leaf. Puree mixture in blender or food processor. Season to taste with salt and pepper. Add asparagus and serve.





BROCCOLI - LEEK SOUP





1 1/2 lbs. fresh broccoli


1/2 c. sliced celery


1/8 tsp. pepper


1 bay leaf


3 tsp. butter


2 tsp. flour


1 leek (8 oz.)


1/2 tsp. salt


1/8 tsp. nutmeg


2 cans (13 3/4 oz.) chicken broth


2 c. half %26amp; half





Trim and split each stalk of broccoli lengthwise into halves. Trim leek, cut off roots and green stems, cut into 1/2 inch slices. In 6 quart pot put broccoli, leek, celery, salt and pepper, nutmeg and bay leaf. Add water to chicken broth to make 4 cups. Bring to boil and simmer covered until tender (30 minutes).


Drain. Reserve broth, puree vegetables in blender. In 6 quart pot melt butter, remove from heat and blend in flour. Gradually add broth, stirring. Heat until boils, stirring. Add vegetables and half and half. Stir until soup is hot (5 minutes).Do you know some recipes to use Artichokes, Leeks, red chicory and or Broccoli in my food? easy to prepare?

I like radishes on a relish tray with fresh carrots and celery. I was just reading about these vegetables in Yahoo News and thinking about something myself.





I found this Drunken Leeks recipe.


6 small Leeks, trimmed and washed


1 clove Garlic, crushed


1/2 cup Red wine


1 teaspoon Red wine vinegar


2 tablespoons Parsley, chopped


1 dash Salt


Black pepper





Directions:





Melt the butter and cook the leeks and garlic for 3 minutes over medium heat. Add the red wine and some salt and mix well. Cover and cook for 15 more minutes or until leeks are tender.





Place the leeks on a serving dish and reduce the liquid left in the pan for 2 minutes. Add the vinegar and pepper to taste. Pour over the leeks and garnish with parsley.

I love just having steamed artichokes with a little melted garlic butter to dip in--you just trim the stem and top, and steam in a vegetable steamer until a knife goes through the base/stem easily.





Things like leeks and broccoli are really good in soups and stir-fries. I love making potato-leek soup, where I saute the sliced leeks in a little butter, then add diced potatoes and cover that with some vegetable stock and a little bit of cream, and let that simmer until the potatoes are soft. I take half of the potatoes with the broth and puree it in a blender, and return that to the pot, add some salt %26amp; pepper, and stir.

Funny what different people consider ';usual'; when they're from different places. To me all those you're asking about are ';usual'; as well as the ones you normally use.





I use artichokes,mushrooms, capers, lemon juice, and white wine to make a great picatta sauce. Should be easy to find a recipe online.





Chicken and broccoli stir fried with some of your other veggies would be very good, with whatever Asian style spices you like.





Or chicken and broccoli casserole with some cream of chicken or cream of mushroom soup and other veggies as you desire. Top with bread crumbs and some cheese and it's a great simple dish.





Steamed brussel sprouts are great.





I use more of the Asian eggplants (Indian, Thai, Japanese) than what most people in the US use, but they all go very well with curry dishes and other veggies.





Leeks can go anywhere you would normally use green onions. They're essentially the same thing anyway.
