Easy and quick food recipes?

My mum is going away next week and I need some good recipes but the rest of my family is picky and they don't like foreign foods. My dad's favourite is quiche and the rest of my family like stuff like that. I'm not that bigger fan I like curry and sashimi and stuff like that! Can you help me out? Maybe a comprise of both?Easy and quick food recipes?
A combination of a pastry dish and an Indan dish, enjoy!


Little Indian-spiced vegetable pies with raita





Ingredients (serves 4)


2 tsp cumin seeds


2 tsp coriander seeds


1/4 tsp dried chilli flakes


1/2 tsp garam masala


60ml (1/4 cup) olive oil


1 large parsnip, peeled


1 onion


2 zucchini, ends trimmed


1 small sweet potato, peeled


2 garlic cloves, sliced


6 fresh curry leaves*


120g cherry tomatoes, halved


4 (25 x 25cm) shortcrust pastry sheets


1 egg, lightly beaten


1/2 tsp mild paprika


Mango chutney and raita*, to serve


Method


Preheat the oven to 200掳C.


Place cumin and coriander seeds and dried chilli in a mortar and pestle and grind coarsely (or you can use 1 teaspoon each of ground cumin and coriander). Combine spices with garam masala and oil. Season with salt and pepper.


Chop parsnip, onion, zucchini and sweet potato into equal-sized pieces, toss in oil mixture, add garlic and curry leaves and spread onto a flat baking tray. Roast for 40 minutes, turning occasionally, until golden at the edges. Set aside to cool (this can be done in advance). Add the tomatoes and toss to combine.


Use a 23cm round template to cut out 4 circles from pastry and place on a greased baking sheet. Divide vegetables between pastry rounds, leaving a 3cm border. Turn border in, fluting the edges. Brush edges with egg and sprinkle with paprika.


Bake for 25 minutes until golden. Serve with chutney and raita.Easy and quick food recipes?

CHEESY TUNA NOODLE CASSEROLE


1 (12 1/2 oz.) can chunk light tuna in water


1 pkg. frozen vegetables


1 (12 oz.) pkg. wide egg noodles


Season to taste


1 can cream of mushroom soup


1 1/2 c. milk


1 (8 oz.) container sour cream


1 1/2 c. grated Cheddar cheese


1 1/2 c. grated Mozzarella cheese


Cook and drain vegetables. Heat soup, milk, and sour cream. Blend until smooth. Cook and drain noodles. Mix all ingredients together with tuna and 3/4 cups each of Cheddar and Mozzarella cheese. Pour into 9 x 13 inch pan. Top with remaining cheese and bake in 350 degree oven for 20- 25 min minutes.
I'm with your tastes. A compromise. How about stirfrys for a start?

English Quiche Lorraine


Growing up in the U.K. we used to make this all the time. Our guests have asked so many times for this recipe. Well here it is. I bake this quiche for friends. Just wrap up in aluminum and voila! A tasty breakfast that they can wake up to.';








1 sheet frozen puff pastry, thawed


4 slices bacon - cooked and crumbled


2 eggs


1 cup milk


2 cups shredded Swiss cheese


salt and black pepper to taste


1 small tomato, thinly sliced


DIRECTIONS


Preheat the oven to 450 degrees F (220 degrees C). Press the puff pastry into the bottom and up the sides of a shallow casserole dish or 8 inch pie plate.


In a small bowl, beat eggs and milk with a fork until blended. Season with salt and pepper. Sprinkle a thin layer of Swiss cheese in the bottom of the pastry crust. Sprinkle crumbled bacon over the cheese. Pour the egg mixture into the pastry and sprinkle with the rest of the cheese. Arrange slices of tomato on top.


Bake in the preheated oven for 20 minutes. Reduce the oven temperature to 350 degrees F (175 degrees C). Continue to bake for an additional 30 minutes, or until crust is browned.





BREAKFAST QUICHE





12 slices bread


2 1/4 c. diced ham


3 c. shredded cheese


5 eggs


2 1/2 c. milk


1/8 tsp. pepper


1/2 c. melted butter





Cut crusts off bread. Butter 4 slices and place buttered side down in pan. Cover bread with ham and cheese. Cover with remaining bread. Beat eggs and add milk and pepper. Pour over bread. Drizzle butter over all. Refrigerate overnight. Sprinkle with paprika. Bake 1 hour at 350 degrees.





BREAKFAST QUICHE





9 inch pastry shell


6-8 strips bacon


1 sliced onion


1 1/2 c. (1/2 lb.) Swiss cheese


2-3 eggs


1 1/2 c. light cream


3/4 tsp. salt


Cayenne pepper


White pepper


Nutmeg


1 tbsp. salted butter





Fry bacon until crisp and crumble. Saute onions in bacon fat. Cover bottom of pastry shell (partially baked) with bacon crumbs and sauteed onions. Add 1/4 cup grated cheese (about).


Add beaten eggs, cream and spice mixture. Top with remainder of cheese. Pour melted butter over top. Bake 35-40 minutes at 375. I add mushrooms. You can also add bits of chicken or whatever! Serves 8.





LAZYMAN'S BREAKFAST QUICHE





1 lb. of sausage


5 eggs


6 slices of bread, crust removed


1 1/2 c. shredded cheddar cheese


1 pt. of half and half


1 tsp. dry mustard


1 tsp. salt





Cook the sausage and drain well. Cut the bread into 1 inch cubes and place in a 13 x 9 x 2 inch pan. Crumble the sausage over the bread. Top with the cheese. Combine the remaining ingredients; pour into the pan. Chill for at least eight hours before baking at 350 degrees for 40 to 45 minutes. Serves 6 to 8.





BREAKFAST - BRUNCH QUICHE





9 inch unbaked pie shell


6 oz. sausage or bacon, cooked, drained and crumbled


4 oz. shredded mozzarella cheese


4 eggs, beaten


3/4 c. milk


1/2 tsp. salt


1/4 tsp. pepper





Preheat oven to 375 degrees. Line unbaked pie shell with half of cheese. Top cheese with cooked sausage or bacon. Cover with remaining cheese. Combine eggs, milk, salt and pepper and beat well. Pour over ingredients in pie shell. Bake 20 to 30 minutes until knife inserted into center comes out clean. Must serve piping hot. Serves 6. This is a basic recipe; any combinations of meat, vegetables and cheeses are delicious.





BREAKFAST QUICHE





1/2 tsp. salt


1 stick butter, melted


12 eggs


3 c. milk


1 lg. loaf of white bread


Grated cheese, your favorite


Chopped onion


Diced meat (ham, bacon or sausage)


Olives, peppers, vegetables, jalapenos (optional)





Recipe to be made the day ahead. Preheat oven to 325 degrees. Mix together salt, butter, eggs, and milk; set aside. Grease 9 x 13 inch cake pan. Lay bread on bottom. You may have to cut bread to fit so that the bottom of pan is completely covered. Sprinkle cheese, meat, onions, etc. on top of bread. Another layer of bread goes on top of this. Pour egg and milk mixture on top. Sprinkle cheese on top. Refrigerate. May be made 24 hours ahead. Bake for 1 to 1 1/2 hours.





Quick, Simple Chicken Curry


An easy, filling meal, without a long list of ingredients! I like this served over rice.





Ingredients


4 boneless skinless chicken thighs, cut into bite-sized pieces


1 tablespoon vegetable oil


1 small onion, chopped


2 cloves garlic, minced


1 green pepper, chopped


2 tablespoons medium curry paste (I use Patak's Curry Paste)


5-6 new potatoes, cooked %26amp; cubed


1 cup frozen green pea


1 (14 ounce) can coconut milk, well shaken


Directions


1In a deep frying pan, brown chicken thighs in oil.


2Remove chicken from pan%26amp; keep warm.


3Saute onion and green pepper until soft; add garlic and saute 1 minute.


4Stir in curry paste and cook 3-4 minutes.


5Add chicken, potatoes, peas and coconut milk; simmer 10 minutes or until curry sauce has thickened to desired consistency.


6Serve over rice.
