Greek Chicken





2 1/2 - 3 pound chicken


2 lemons


1 orange


5 nice sized sprigs of rosemary


A handful of fresh oregano


5-6 large cloves garlic


1 - 2 tablespoons dried red chili pepper flakes


salt





Roughly chop 1 lemon, orange, 4 garlic cloves and mix in a bowl with a teaspoon or so of salt. Add a few sprigs of rosemary and about as much oregano. Stir in a tablespoon chili pepper flakes. You're not going to be eating this stuffing, so don't worry about it. It keeps the chicken extremely moist and gives it tons of taste.





Finely chop the rest of the rosemary, oregano, and garlic. Mix with salt and red pepper flakes. Rub this mixture between the skin and the meat of the bird. Slice remaining lemon and add the slices between the skin and meat of the bird.





Cover and bake at 350 degrees for 1 hour and 15 minutes. Uncover and let it bake to brown for about another 45 minutes.

Yoghurt dip - (Tzatziki) - this is so simple and tastes great:


You need:


1/2 kilo strained yoghurt


1 cucumber


4 garlic cloves (more makes it with stronger taste)


salt


oil


vinegar





Method:


Grate the garlic and mix it with salt and vinegar. Peel the cucumber, grate it and squeeze it until all its water is removed. Put the yoghurt into a bowl and add the cucumber into it. Then mix the yoghurt with the mixture of grated garlic. Whiz the content until all the ingredients are well mixed. Add some oil. Yoghurt dip can be served in a normal temparature but it is rather prefered cold.

To tell you the truth the hearth of Greek recipes is the Greek salad.So that's what i'll suggest because Greek main dishes can be somehow tricky to make,make Greek salad! Everyone will LOVE it!

Ingredients:





4 ounces feta cheese


1 cucumber


1 red/green bell pepper


5 tomatoes


1 head romaine lettuce


Black Olives - handful


1 large red onion, peeled and thinly sliced


1 tsp dried oregano


Salt


Freshly ground black pepper


Red wine vinegar


Olive oil





Preparation:





Assemble feta cheese and vegetables in a large bowl. Sprinkle with the oregano, salt and pepper


. Drizzle with olive oil and vinegar and serve.
