wholesome pasta bake

wholewheat pasta(95p)

1 red onion(15p)

1 clove garlic(25p)

1 tin of chopped tomatoes (45p)

lug of olive oil(various)(small bottle 1.09)

fresh spinach / chard

3 handfuls cheddar cheese.(1.00)

cost 拢 3.44

Boil your pasta until slightly undedone and drain.

very gently fry in olive oil or butter ( i use half and half ) the red onion for 10 mins until soft. Add garlic and fry for a further 2 mins. add chopped tomatoes and simmer for 5 mins.

In another pan add spinach and a knob of butter put on a very gentle heat for a few mins. Once wilted put aside.

Put the pasta in an ovenproof dish and add tomatoe sauce and spinach . mix together. top with a good grate of cheddar or parmesan(cheddar if on a budjet!)

cook in pre-heated oven on 180 degrees (gas mark 6) for 30 mins.

enjoy:) x

top tip - if u can stretch to extra virgin olive oil it really makes a difference!-just use sparingly.
simple, quick shortbread. Very little equipment needed.

8oz plain flour

6oz margerine/butter

4oz caster sugar (granulated will do - it changes the texture)

While you're preparing this, let the oven heat up to about 180 degrees.

Mix the ingredients together. When they are in one big lump, get your clean hands in there and pummel it about until it has one smooth texture, like play dough.

You could leave it in a polythene bag in the fridge in this state, for up to a couple of days, until you want to bake it.

Get a clean, flat metal dish or tray (a metal biscuit tin lid would do at a pinch), and rub it with a very thin coating of oil or butter or margerine, then dust it with a thin coat of flour. This will help prevent sticking. Roll your mixture into golf ball sized lumps, then flatten each lump into a thick biscuit shape onto the baking tray. (I do this by pressing a large fork onto it twice, in a cross shape, so it looks interesting).

Put the tray in the oven, and bake until the shortbread turns a nice golden colour (about twenty minutes, depending on how thick you made the biscuits)

You can vary this recipe: stir in a large dolop of peanut butter while mixing the ingredients, and then scatter peanuts on the finished biscuits for a cheap version of a really expensive cookie.

Other variations: add cocoa powder or drinking chocolate; or dessicated coconut which can be bought in bags at supermarkets. Grated orange and lemon zest (the outside of the rind) will give a nice citrus flavour (grate it while it's still on the fruit). You could add a teaspoon of ginger if you like it.

Remember the ratios: 8, 6 and 4. Double them, halve them or change them to grammes, depending on how many you're cooking for.
Taste of Home magazine has a feature where they have a whole meal and break it down to what it costs per person, sometimes it's just a dollar or less per person, if you want another source to look for inexpensive meals.

But this one is a regional favorite side dish that costs little and is very good, around here we call them Funeral Potatoes because they are easy to take to a berieved family.

1 bag (24 - 36 oz) frozen hash browns

2 cans cream of chicken soup

1 16 oz carton sour cream

1/2 small onion finely chopped, (or onion salt, or dehydrated onions)

2 cups grated cheddar cheese

tsp each salt and pepper

1 tbl butter

2 cups corn flakes cereal crushed

Place half of frozen hashbrowns in a 13x9 baking dish. In a bowl, combine soup, sour cream, onion, and grated cheese. Spread half of soup mixture over hashbrowns. Top with the rest of the hashbrowns, and then the rest of soup mixture.

Coat crushed corn flakes in melted butter, and sprinkle over the top.

bake in 450 degree oven for 35 - 40 minutes.
Do you have wings Nessie? x
http://www.hillbillyhousewife.com That is a good one.

Didn't I see you once Nessie? Or was that the single malt?
Here'e a quickie,

In a buttered shallow dish thinly slice a potato (thinner than as if for chips but thicker than as if for crisps ) and place in layers, seasoning well.

Pour over a good tablespoon or so of milk.

Top with grated cheese.

Cover with clingfilm and pierce a couple of times.

Microwave on full for 3-7 mins depending on size of potato.

Checking halfway through with the point of a knife.

Adjust cooking time as required.

Leave to stand for a minute or so and eat straight from the dish.

Voila Easy Peasy!!

Minimum washing up an added bonus!!

You can also alternate thinly sliced onions with the potato or -- even omit cheese and put a layer of corned beef in the middle and just dot the top layer of potato with tiny knobs of butter.

Mwahh!! Enjoy.

I do a chicken in cheese sauce with mushrooms.

1 whole chicken roasted. ( remove skin %26amp; strip off the meat)

1 pint semi skimmed milk

150g mushrooms (sliced)

1/2 tsp salt

100g medium cheddar cheese (grated)

1 heaped tbsp cornflour

2 knobs of butter

Put stripped chicken in an oven proof dish.

Melt a knob of butter in a frying pan and add the sliced mushrooms, fry for 2 minutes.

Scatter mushrooms over the chicken in the oven proof dish.

Put 1 pint of milk, salt and butter in a saucepan and bring to boil gently. Mix cornflour with a little water and add to the milk mixture, stirring constantly. When the milk has thickened add in 1/2 of the cheese and stir thoroughly, when mixed pour the milk mixture over the chicken. Sprinkle the remainder of the cheese over the top of the dish. Cook in oven on gas mark 5 for 20 minutes.

Serve with pasta.

NB you can also add a few green grapes to the dish to give it and extra dimension
I have a simple recipe. You will surely love it.

Its called Bicol Express.

All you have to do is to cut the pork meat in small cuts. Then sautee' a crushed garlic and onion. When it turns brown, put the meat and sautee' it aswell.

When the meat is sauteed already, put one cup of cocunut milk and let it simmer.

Add a lot of chili and salt to taste.
fried potatoes. cut them, no need to peel. you could just use salt to season it. simple but tastes great.
Hi. When I was pushed for cash I invented this. It sounds complicated but it isn't and it's delicious. Pan of hot oil (half inch deep). Drop in a portion of half previously cooked spaghetti. Onto that, grated cheese. Mix. Onto that sliced tomatoes (or if in US 'tomaytoes'. Again mix. Onto that sliced onions. Mix. Messy but delicious! DB
Check out the ';White Trash Cookbook';. It's in any bookstore in the cooking section.
