The following recipes are titled Enchiladas, but they turn out more like burritos -- my husband calls them Enchiritos.
Enchiladas
2 pounds lean ground beef
1 large chopped onion
1/8 teaspoon garlic salt
1 package taco seasoning
12 (8 inch) flour tortillas
8 ounces shredded Colby cheese
2 (19 ounce) cans enchilada sauce
Preheat oven to 350 degrees F (175 degrees C).
In a heavy saucepan or skillet, brown the ground beef and onions. Season the ground beef mixture with garlic salt and taco seasoning. Let simmer 5 minutes.
Spoon some meat mixture and cheese into the center of each tortilla, roll them up and arrange them in a 9x13 inch baking dish or oblong pan. Pour the enchilada sauce over the rolled enchiladas and top with any remaining meat or cheese.
Bake in the preheated 350 degrees F (175 degrees C) for 20 to 30 minutes. Top with sour cream, salsa, lettuce and diced tomatoes
Enchiladas
1 pound lean ground beef
1 small onion, chopped
1 (1.5 ounce) package dry enchilada sauce mix
10 (10 inch) flour tortillas
2 cups shredded Cheddar cheese
1 (2.25 ounce) can sliced black olives, drained
Preheat oven to 350 degrees F (175 degrees C). In a medium skillet over medium high heat, cook the ground beef and onion until beef is evenly browned and onion is tender.
Prepare the enchilada sauce according to package directions. Pour 1/4 cup of the sauce into the bottom of a 9x13 inch baking dish.
On each flour tortilla, place an equal portion of the ground beef mixture and about 1 ounce of Cheddar cheese, reserving at least 1/2 cup of cheese. Then tightly roll the tortillas and place seam side down in the baking dish.
Pour the remaining sauce over the top of the enchiladas and sprinkle with the remaining cheese and olives.
Bake in a preheated oven for 20 minutes, or until the sauce is bubbly and cheese is thoroughly melted. Top with sour cream, salsa, lettuce and diced tomatoesWhat are some easy burrito style food recipes?
