';you can mash,cut, and freeze just about anything for your toddler.
Frozen Fruit Treat
1 3/4 cups strawberries 1 large can crushed pineapple
5 bananas (cut in cubes)
12 oz frozen orange juice - concentrate
1 1/2 cups water
Mix ingredients together. Freeze in small paper cups. Serve partially defrosted. Children love this nutritious treat!
Quesadillas
1 6-inch tortilla
Shredded mild cheddar and mozzarella cheese
Cooked, finely chopped broccoli and/or carrots
Cooked, finely chopped chicken
Place 2 - 3 tablespoons of the cheeses on 1/2 of the flour tortilla. Sprinkle with 1 teaspoon of cooked, chopped vegetable of choice. Add 1 teaspoon of finely chopped, cooked meat if desired. Fold in half and microwave about 30 seconds. Let cool and cut into wedges.
Tip: I chop the meat in an electric handy chopper so it is not too chunky.
Mini Pizzas
1 15-oz. bottle pizza sauce (I like Contadina)
1 5-biscuit can of your favorite buttermilk biscuit
Finely shredded mozzarella
Flatten the biscuit on wax paper with a rolling pin until it is about 4 inches in diameter. Sprinkle a cookie sheet pan with cornmeal. Place the flattened biscuit on the pan. Spread about 1 tablespoon of pizza sauce on the biscuit. Add thin slices of yellow and zucchini squash. Dot on a few very small broccoli florets. Hide everything under cheese. Bake in a 400 degree preheated oven for 10 - 12 minutes. Choose any vegetable combination you want.
Let your child make suggestions as to what ingredients to use. Broccoli slaw, available in most grocery produce areas, works well.
You can also hide ';pulverized'; fresh or frozen spinach in the pizza sauce (about a teaspoon to 1 tablespoon of pizza sauce).
Frozen dinner rolls may be used instead of biscuits.
If you use dinner rolls, thaw them before you roll them out.
Bake them in a 350 degree preheated oven for about 15 minutes.
Sweet Potato Pockets
This is a great vegetable recipe for picky eaters!
1 small can of your favorite buttermilk biscuit
1 large sweet potato, baked
1/4 cup brown sugar
2 tablespoons melted margarine
1/4 cup white sugar with 1 teaspoon cinnamon mixed into it
Bake a sweet potato much like you would a regular white, baking potato.
I use the microwave because it is faster.
Flatten the biscuits much like you would for a mini-pizza. Cut open the cooked sweet potato and scoop out the pulp. Place it in a bowl. Add the melted margarine and brown sugar. Stir everything up with a fork until smooth. Put 1 to 2 tablespoons of the mixture on 1/2 of the flattened biscuit. Fold over the other half and seal with the tines of a fork. Gently roll the pocket in the white sugar/cinnamon mixture. Bake in a preheated 400 degree oven about 12 minutes or until browned. Be sure to let cool before serving. the center will be hot.
You can change these by adding some pulverized, cooked chicken. Add about 1/4 cup to the sweet potato mixture if desired.
You can also add 2-3 tablespoons of raisins, coconut, or both to the sweet potato mixture. Sometimes I have more filling than biscuits. If this happens, spoon heaping tablespoons of filling onto a cookie sheet and freeze. Transfer the frozen filling to a zip lock bag. You can place a scoop of frozen filling on the next batch you make. It thaws out in the oven.What are some good easy recipes for toddler food?
How about some little pizza pockets...
if you are lazy like me, then buy your frozen bread dough and thaw. roll out fairly thin (about 1/2 inch) and cut into rounds. Place fillings on the rounds with a bit of sauce and cheese. Fold and seal. Bake and then freeze.
How about some little jello boats...
Hollow out some oranges and make the jello according to the directions for jigglers. Set. When ready slice the ';orange'; into a few sections (I do 3) and then add a few embellishments like a sail.
Or Pizza sticks...
As long as you are buying the bread dough...work in some diced meat (like salami, or pepperoni) and basil and oregano. Roll out into about and inch thick and let rise for an hour or so. Bake and then freeze. When serving it let him dip into tomato sauce.
How about little muffins. That always went over really well with my boys. Try adding stuff like pumpkin seeds and carrots or zucchini and sun flower seed. a bit of variety and yummy!

PINTO BEANS. I swear, this is by far, my daughter's favorite food. She would rather eat whole beans with her fingers, even if there was a cookie in front of her. Thank God she likes them. They are cheap, and extremely healthy.
We pay 50 cents per pound DRY, and a pound of dry makes about 4 pounds of edible beans.
She loves that, and rice. She has been eating beans since she was 11 months old, and is now 19 months.
My husband is Mexican...so we lovingly call her our little ';beaner';.
Here's one for you ~
Banana Cream Baby Food
1 overripe banana
2 tablespoons infant formula or breast milk
1 tablespoon plain plain yogurt
Mash the banana very well with a fork, or in a food processor or blender.
Add the breast milk or formula and the yogurt and mix until well combined, and it is a good consistency.
If the blend seems a little too thick you can add more formula, breast milk or yogurt.
Store this in a sealed plastic or glass container in the fridge.
Here's a kids recipe for a pineapple orange granita. It's really easy to make. I make it for my 3 year old nephew and he loves it, esp during summertime. Enjoy.
1 Cup Pineapple, Chopped
1/4 Cup Orange Juice
1 1/2 Cups Ice
Puree pineapple and orange juice in a blender. Add ice and blend until smooth. Use immediately or store in the freezer. For later use, remove from freezer and let thaw until soft enough to break up with a fork. Serves one.

I make a casserole with whole wheat noodles (I use the curly ones, rotini I think) spaghetti sauce and fill it with veggies, broccolli, spinach, corn, carrots, onion etc whatever your child likes. Then I mix some cheddar into it and bake it in the oven for about 35 minutes at 350. When it is done, I put some of it in little tupperware dishes and freeze it. My daughter loves this.

Create a Muffin
2 cups flour (i use half whole wheat and half all purpose)
3/4 cup brown sugar
1/3 cup dry milk powder
1 TBSP. baking powder
1 egg
8oz. fruit or veggie puree
1/2 cup milk
1/4 cup vegetable oil
Preheat oven to 425 degrees.
Grease 12 muffin cups.Combine dry ingredients in a bowl and make a well in the center. In seperate bowl combine wet ingredients and pour into dry ingredients stir just until moistened (do not over mix)
Fold in extras.
Bake for 20 minutes or until golden brown..
Here are some favorite combos
-fruit puree:applesauce, fold 1/4 cup of raisins and some cinnamon.
-fruit puree: apple blueberry puree, fold in 1/2 cup frozen blueberries
-fruit puree: pureed prunes, 1/2 cup diced pears
-fruit puree: pureed bananas, 1/4 cup chopped nuts
When making veggie muffins reduce the brown sugar to 1/4 cup.
-veggie puree:pureed pumpkin, fold in 1/2 cup rolled oats, and a dash of cinnamon
-veggie puree: pureed spinach, fold in half cup sharp cheddar
-veggie puree: pureed broccoli, fold in chopped ham, and 1/2 cup shredded cheese
-veggie puree: pureed potatoes and broccoli, fold in chopped chicken and peas
This is a good snack that is easy to make and is something to give him, whilst you do something else.
Mouse Traps.
Toast 6 slices of bread
Sprinkle with grated tasty cheese and cut into fingers.
Bake in a slow oven for 30-45 minutes until crunchy.
Store in an airtight container.
Vegemite under the cheese tastes nice and sweet.
Bacon sprinkles could also be added.
